Brewing

Beer is the world's oldest and most popular alcoholic beverage and in our, admittedly slightly biased opinion, it is probably the greatest drink in the world. The ancient Egyptians loved nothing better than a refreshing beaker of beer whilst the equally ancient Sumerians even had a goddess of beer called Ninkasi, and they certainly weren't alone.

Beer is an alcoholic drink produced from the fermentation of sugars by yeast to produce alcohol. The ingredients for brewing beer are: Malted Barley (barley that has gone through the malting process), Hops (cone-like flowers that give bitterness and a host of flavours and aromas), Yeast (converts sugars to alcohol) and the main constituent of beer Brewing Liquor (or special water to you and I).

Malting

After ripening, barley is harvested and the grains are taken to a maltings where skilled maltsters soak the grains in water and then allow them to germinate under carefully controlled conditions. This softens the grains and breaks down the starch within the grains into soluble malt sugars. The next stage is kilning where malt is dried out to provide the desired flavour and colour. During the brewing process malt sugars are feasted upon by the yeast during fermentation to produce alcohol and carbon dioxide.

Brewing

Maltsters deliver malted barley every day to Carlsberg breweries across Europe including Northampton and Leeds in the UK. We crush the malt and add hot water in something called a mash tun for a couple of hours to convert the starch into sugars and produce a creamy liquid called wort. The wort is pumped into a large kettle and boiled with hops which help give the beer its flavour and aroma. This hopped wort is then cooled and transferred to fermentation vessels and combined with yeast. Yeast is a single cell fungus plant that feasts on the malt sugars within the hopped wort to produce alcohol and carbon dioxide.

We still use the original yeast used to brew Carlsberg, Saccharomyces carlsbergensis. The beer stays in the fermenting tank until it is ready for chilling, maturing and filtering. The beer is then transferred to kegs, bottles or cans, and distributed all over the UK so that you can enjoy the distinctive refreshing taste of Carlsberg.
